Somewhere between my obsession with BBQ sauce and my love of a loaded bowl meal, this recipe was born. I have to say, it might be the best thing to come out of my kitchen this summer.

Chicken โ€” boneless skinless chicken breasts or thighs. Thighs give a juicier result; breasts are leaner but equally delicious.

Smoked paprika, garlic powder, onion powder, salt and pepper โ€” the spice blend that gives the chicken its smoky flavor before any BBQ sauce touches it.

BBQ sauce โ€” used for both the chicken and the dressing. I like Stubb’s Original or Primal Kitchen Classic for a cleaner option. If you want to go further, my homemade BBQ sauce works wonderfully here.

Sweet potato โ€” roasted until caramelized and tender. The natural sweetness pairs perfectly with smoky chicken.

Cooked rice โ€” white rice, brown rice, or a mix of rice and cauliflower rice to lighten it up.

BBQ ranch dressing โ€” this is the star of the show. Greek yogurt, BBQ sauce, and ranch seasoning make it creamy, smoky, tangy, and packed with protein.

How to Make It

Step 1: Toss sweet potato chunks with avocado oil spray, salt, pepper and garlic powder. Roast at 400ยฐF for 20 to 30 minutes until tender and caramelized.

Step 2: While the sweet potatoes roast, prepare your black bean and corn salad and set aside.

Step 3: Season the chicken with smoked paprika, garlic powder, onion powder, salt and pepper. Cook until the internal temperature reaches 165ยฐF โ€” air fryer at 375ยฐF for 12 to 15 minutes flipping halfway, or grill/stovetop over medium heat for 5 to 6 minutes per side. Let it rest for 5 minutes, chop into bite-sized pieces, and toss with BBQ sauce.

Step 4: Whisk together Greek yogurt, BBQ sauce, milk, ranch seasoning mix, apple cider vinegar, and salt until smooth and creamy.

Tips

Pat the chicken dry. This helps it brown instead of steam, giving you better flavor before the sauce goes on.

Add BBQ sauce after resting. Since BBQ sauce contains sugar, tossing it on too early can cause burning. Chop first, then coat.

Cut sweet potatoes evenly. Aim for 1-inch pieces so they roast at the same rate โ€” every bite gets tender with caramelized edges.
